Description
This is our flagship product. The juniper is evident so you know this is a gin. Vapour infused in the London dry style. The rosemary and cassia bark add some wonderful spicy, herbal middle notes while the coriander seed, lemon myrtle and kaffir lime all provide complex supporting citrus notes to the star of the show, the pink grapefruit. The result is a gin that we go back to again and again when we need to relax with a refreshing cocktail. We hope you enjoy this as much as we do.

Just received my first two bottles of the Signature Dry Gin and wow! I am seriously impressed. The pink grapefruit certainly is the star of the show. Perfect splashed over ice with tonic, which really releases all the flavour.
I will be back for more and look forward to seeing what the Hillarys Distillery comes up with next.

I shared some of my first bottle of Hillarys Distillery Signature Gin with a friend, who used to own several liquor stores before he recently retired, and his comment was “we (he and his wife) are not normally gin drinkers but this one is magnificent”. Praise indeed from someone who knows their spirits!
The reaction from friends and relatives who tasted it was “wow that’s amazing!” I will definitely be buying more bottles of this fantastic gin.

We were so excited to receive our two bottles of signature gin! The bottle is beautiful and upon opening, the aroma was lovely – hint of floral and citrus.
We tasted with friends, and all agreed it was a smooth, beautiful gin. As a dry gin, the hint of grapefruit was noticeable and very enjoyed. We mixed the gin with elderflower tonic, which was recommended and this was a sensational pairing.

Were lucky enough to open bottle number 6 with our staff and enjoy an afternoon of gin. The dry gin was delightful, easy to drink, even for our usual non gin drinkers. We found it was very much complemented by a sprig of rosemary and intend to purchase more!

I bought a bottle of this fine Gin a month ago and finally cracked into it last weekend (wish I had sooner!) And it was absolutely delicious, definitely one of the best Gins I’ve had, ever 🙌🙌❤️🌺 . We just happened to sample some Hillary’s Distillery Gin and our local Bottle O, and absolutely loved it. It’s so smooth and palatable. Definitely the best gin I’ve ever had. We enjoy ours with Fever Tree Mediterranean Tonic, blood orange and fresh thyme. It’s perfection in a glass.

Such a fresh, clean gin. You can actually taste how high the quality is. Usually, I add tonic or grapefruit soda to my gin, but the other day I had run out so I had it with San Pellegrino and it was perfect! Will definitely be ordering again.

I think this hands down is the best examples of a London style Gin in Australia and the pink grapefruit rind is really an amazing addition for a gin and makes the difference. I have tasted so many London dry style’s of gin and this is definitely one of my top choices. I really think it can go toe to toe with the world best that is how good it is. You will not be disappointed.
